Title: Blueberry Mousse with Raspberry Sauce

Yield: 12 Servings

12ozCan evaporated skim milk
1/4c;cold water
2 Envelopes unflavored gelatin
1/4c;boiling water
16ozPackage frozen unsweetened blueberries; thawed
3tbOrange liqueur; such as Grand Marnier
2tbFresh lemon juice
1/4cSugar
RASPERRY SAUCE
12ozFrozen unsweetened raspberries; thawed
1/4cSugar
1tbOrange liqueur; such as Grand Marnier
1tsLemon juice

NOTES: Grand Marnier can be replaced with thawed frozen OJ concentrate. Using a hair dryer, instead of hot water, to lightly warm the outside of mold results in less melting, the pattern coming out sharper.

MOUSSE: Several hours before you plan to make the mousse, put the can of milk in refrigerator to chill. Chill mixing bowl and beaters in freezer to ensure milk whips properly.

Place cold water in small bowl, sprinkle with gelatin. Allow to soften 5 minutes. Add boilding water and stir until gelatin is dissolved.

Place blueberries in blender. Add liqueur, lemon juice, gelatin mixture; puree. Transfer to medium bowl and refrigerate until needed.

Remove bowl and beaters from freezer. Pour chilled milk into bowl; beat until soft peaks form when beaters are lifted. Slowly add sugar and continue beating until firm peaks form.

Pour blueberry mixture over whipped milk. Using a rubber spatula, carefully fold in blueberry mixture until no streaks of white show. Pour into mold, cover and refrigerate at least 4 hours.

Unmold mousse onto a serving platter, or spoon into individual containers. Top with Raspberry Sauce.

SAUCE: While mousse is chilling, combine raspberries, sugar, liqueur and lemon juice in a blender container; puree. With a spatula, press through a fine strainer (to remove seeds) into a medium bowl. Cover and refrigerate until ready to serve.

Each serving (with Sauce): 100 calories, 1 milligram cholesterol, 1 gram fat, 38 milligrams sodium, 15 grams protein, 26 grams carbohydrates.
